10 unpeeled cloves of garlic
2 lemons cut into eighths
2 tbsp thyme
3 tbsp olive oil
150ml white wine
Salt and pepper to taste
Pre-heat oven to
160°C.
Put the chicken
pieces into a roasting pan and add all the ingredients. Mix everything together
well and spread out the chicken pieces making sure they are all skin side up.
Cover tightly with foil and place in the oven to cook for 2 hours.
Remove the foil from
the roasting tin, turn up the oven to 200°C and cook the uncovered chicken for
another 30 minutes. By this time the skin on the meat will have turned golden
brown. If you choose to make the "Delicious Oven-Baked Potatoes" as a side dish for the chicken, then place the potatoes in the oven half an hour before the first 2 hours are up.
