1 sheet unflavoured gelatin
100g smoked salmon, coarsely chopped
1 cup unflavoured greek yoghurt
2 tbsp fresh lemon juice
¼ tsp salt
Chopped parsley for garnish
Soak the gelatin in cold water. When softened, drain and place in the microwave just a few seconds until dissolved. Set aside.
In the bowl of the thermomix, combine salmon, yoghurt, and lemon juice. Set 10sec./speed 6. Season with salt. With motor running on speed 2 add dissolved gelatin and blend until combined.
Pour into two small bowls. Cover with plastic wrap, and refrigerate for at least 3 hours to set. Garnish mousse with parsley and serve with crackers, toast or bread slices.
