Zucchini and Cheese Muffins

These muffins make a great snack. They are light, nutritious and tasty.

¼ cup wheat germ
2 cups flour
1 tbsp baking powder
1 tbsp sugar
½ tsp sal
½ tsp pepper
100g butter, melted
1 cup milk
2 eggs
1 cup shredded zucchini
1 cup shredded cheese

Preheat oven to 200ºC. Line 18 muffin tins with baking cups. Toast wheat germ in a non-stick frying pan over medium heat. Remove to a medium bowl and add flour, baking powder, sugar, salt, and pepper. Mix until well combined. In another bowl, whisk together butter, milk and eggs. Stir wet ingredients into dry until just combined. Fold in zucchini and 2/3 cup cheese.

Divide batter among muffin cups and sprinkle with remaining cheese. Bake for 18 minutes until golden and when a toothpick is inserted it comes out clean. Let cool for 5 minutes, then transfer to a wire rack and let cool completely.
